The History
In 1969, bartender Walter Chell was creating a new signature cocktail for the brand-new Italian restaurant in the Calgary Inn, named Marco's. Walter took inspiration from his favourite dish that he longed for since leaving Italy, Spaghetti Alle Vongole, which is served with fresh tomato sauce and clams. The guests at the restaurant loved it and soon so did the city, the province and the country…the rest is history. In 2010 the Canadian government declared the Caesar as Canada's National Cocktail and now Calgary is officially taking it back!
